Here's what I made tonight it's gluten free pasta spirals with Chantenay carrots sweet peppers onions garlic mushrooms and plum tomatoes, I cooked the onions peppers mushrooms and garlic in olive oil then added a little buckwheat flour then the tomatoes and stock from the carrots. Then baked for approx 20 mins.
The pasta is made from maize and rice so this is gluten free and plant based. And I enjoyed it. π
I would add a protein source such as lentils, beans or seitan and probably sprinkle some nutritional yeast on top when serving for that nutty, cheesy taste. Plus I prefer buckwheat pasta (check out Tesco's own - quite cheap) as it's wholemeal. Otherwise it sounds great and definitely something I'd enjoy.
