As we have the poll on Italian Food and today is National Peanut Butter Lovers Day in the US, I made this.
It's vegan and gluten free buckwheat spirals in a sauce made with diced onion, garlic, chili, plum tomatoes, mushrooms and black beans with crunchy peanut butter and some water to thin it a little. I seasoned It with black pepper ginger oregano and a little nutmeg. It is gluten free and plant based. There are lots of gluten free vegan dishes on VFL so well worth checking out.
The pasta I cooked seperately then mixed it all together and baked for 20 mins. and I really enjoyed it.
