As we have the poll on Italian Food and today is National Peanut Butter Lovers Dayin the US, I made this.
It's vegan and gluten free buckwheat spirals in a sauce made with diced onion, garlic, chili, plum tomatoes, mushrooms and black beans with crunchy peanut butter and some water to thin it a little. I seasoned It with black pepper ginger oregano and a little nutmeg. It is gluten free and plant based. There are lots of gluten free vegan dishes on VFL so well worth checking out.

Now I could low fodmap that by using Hing to replace the garlic and onions, there's a thoughtπ

Hey thanks Alicia, I'm sure that your FODMAP version would work as I smiled at your post on VFL as you have made some yummy looking FODMAP peanut butter amongst other deligts.

I'm sure it would, I'm going to have to start making up my own quick low fodmap food rather than have to freeze everything, I've run out of freezer spaceπ
