Quinoa lentil and veggie stir fry ๐Ÿฅ˜

Hi everyone,

I had some left over quinoa and lentils from last night so tonight I cooked some onions garlic mushrooms baby tomatoes peas and broccoli with chilli in a little olive oil, I added a little yeast extract, stock with ginger turmeric and black pepper. I had too many mushrooms and tomatoes so wanted something which needed plenty of them and just added the peas and broccoli from my freezer.

Being a coeliac I know how important a free from meal is to some so I like to keep meals plant based too when I can.

So a no waste meal and its gluten free and plant based, which I enjoyed very much. ๐Ÿ˜Š

Your meal looks extremely tasty - and the stock looks very flavourful with the ginger and turmeric - and all the other wholesome ingredients. Yum!

Looks so yummy was just thinking this morning how to use all my extra veggie's that are so close to going bad with some shrimp tonight. A good stir-fry with cualiflower rice might work. It's a wonderful idea not to waste food mine was sparked by cleaning the refrigator last night and noticing how fast things have gone bad. It's the the refig. it's the stores and stocking times, another sttory entirely. Pleasent day to you!
