Hi everyone,
I had some left over quinoa and lentils from last night so tonight I cooked some onions garlic mushrooms baby tomatoes peas and broccoli with chilli in a little olive oil, I added a little yeast extract, stock with ginger turmeric and black pepper. I had too many mushrooms and tomatoes so wanted something which needed plenty of them and just added the peas and broccoli from my freezer.
Being a coeliac I know how important a free from meal is to some so I like to keep meals plant based too when I can.
So a no waste meal and its gluten free and plant based, which I enjoyed very much. π
