This is what I made for dinner tonight it's a vegetable hot pot with onions garlic mushrooms plum tomatoes carrots peas green beans and some Brussel sprouts with thin slices of potatoes thinly diced in their skins and baked with golden linseed on top just for a bit if extra nutritious crunch. π

I had vegetable hotpot too; carrot, parsnip, turnip, red onion, sliced new potatoes, 2x vegetable stock cubes, with a scattering of breadcrumbs & cheese. Should have had a scattering of flax, pumpkin & sunflower seeds.
