It's nice after Christmas to have a wholesome but simple meal and this is what I baked tonight. I cooked broccoli tender stems with spinach peas sweetcorn carrots and green beans with a little ginger and thickened it with a little gram flour and chia seeds. For the topping I add sliced chestnut mushrooms sliced white onion sliced potato and I then added some chives pumpkin seeds chia seeds and sesame seeds. I baked it until the top was crispy...
This meal had 15 different plants so I was pleased with that and I had some home made mince crumble with apples sultanas cinnamon, served with soy cream so thats another 4. This is also plant based and gluten free.
I eat lots of the same foods so it will be interesting how close to 30 I get.
