Left over veggies

Last night I cooked a bunch of vegetables for dinner - roast potatoes, pumpkins & carrots and steamed beans, cabbage, broccoli and corn.

Tonight I used the leftovers in this dish - it was a cross between a frittata and a savoury pancakes. I roughly chopped the veggies, then whisked 2 eggs and added garlic, milk, grated cheese, herbs and 2 tablespoons of flour. I also added some spring onions which I lightly fried in some butter before adding the veggies and the batter. I cooked it on a low heat on the stove for about 5 minutes then popped the pan under the grill to cook and brown the top.

I like to experiment with food and I don’t like wasting anything. Never be afraid to try something new and make it up as you go along 😉
