Here's what i made for dinner last night. It's a favourite of mine: quinoa and lentils cooked together with mixed veggies. I had steamed and frozen some organic mushrooms. I kept the stems and cooked them with onion. I added gram flour before adding the stock to thicken it. This is gluten free and plant based.
I have frozen onions, garlic and lots of veggies frozen including many I've blanched and frozen myself, so I could make a meal like this with just dried and frozen food.
