Hi everyone,
Here's what I made for dinner tonight, its a simple casserole made with organic onions new potatoes local cauliflower garlic chestnut mushrooms baby plum tomatoes spinach and tinned organic green lentils, I lightly cooked the onion garlic and tomatoes first.
I mixed a little gram flour with some cold water added more with low salt bouillon with a little black pepper chives and ginger then put everything in the slow cooker with the veggies lentils and left it to cook merrily away.
Some of the veg are local and organic plus it's gluten free and plant based.
As we're all being encouraged to eat more veggies I'm pleased that I love a simple plate of food like this.
