Tonight I baked some large vine tomatoes with red quinoa sweet baby peppers red and green chilli white onion garlic and some veg from my fridge and I baked it with ground almonds and sesame seeds scattered on top. I had roasted new potatoes with it.
This is gluten free plant based and if you omit the potatoes low carb.

I think those Large Vine Tomatoes are Magnificent! You've done a very delicious meal there - and I like the addition of the Ground Almonds and Sesame seeds - the roasted potatoes look fantastic.
