One of my neighbours gave me this large courgette yesterday so it nice and fresh and today I stuffed it and baked it with some roast potatoes.
The stuffing I made with quinoa and red lentils cooked together while I gently cooked diced onions mushrooms and tomatoes in olive oil to soften them, then I blended most of it with the quinoa and lentils and spread that into the scooped out halves of the courgette and baked with some roast potatoes and I had garden peas with it and some gravy. The photo is before I sloshed gravy over it. This is gluten free and plant based and I enjoyed it.
