I've noticed that green and black lentils are fantastic in dishes like this and it's really simple to make. I cooked some organic onions and mushrooms to soften added a tin of organic black lentils the stock was the water the sweet potatoes were cooked in before mashing. I added a desert spoon of gram flour to some cold water mixed and added to the stock with low salt bouillon yeast extract ginger parsley black pepper and topped with the mashed sweet potato topped with golden linseeds as I like the crunch and they pack a punch nutritionally so the best of both worlds. I had it with some frozen veg, well I cooked them obviously...
Being a coeliac I know how important it is when we want free from food so lots of my main meals are gluten free and plant based and full of goodness and I like that.
Sorry Jerry I like most things you post. But I don't like dark colored food's, not appetizing to me. I even tried Quinoa, it tasted Good, but couldn't get past the look of it. Needs a pop of color?
