Which is you favorite healthy food preparation? Mine would be a simple lentil dahl with loads of vegetables and spices...

I am veggie so when I eat lentil I feel like I am helping my body to keep the iron level normal (avoiding anemia!). By adding chopped vegetables to cook with the lentil I am also adding some vitamin C (pepper have loads) that helps in the iron absorption.

Apart from that I just think it is an easy, warm and tasty thing to eat even on its own! Specially for dinner when I don't need so many carbs. I don't even follow a specific recipe, in fact I like it to taste a little different every time. But roughly I put 1 cup of lentils, 3 cups of water (or home made vegetable broth or low sodium powder broth), cut a little bit (about 2 cups?) of carrot, bell pepper, courgette (or what ever I have around that is not too watery). I put that to boil and separately I stir fry some onions, cumin seeds (or mustard seeds or coriander seeds) with some good quality vegetable. I also put some turmeric (or paprika) powder on the liquid. When the mix is all nice and soft I chop some coriander or parsley to put on the top. Pretty simple stuff!

Thanks Simone, I am so glad you are posting about the veggie food and I will check out the BBC link too shortly. :)

For a quick healthy fix when not much time or not feeling like eating a breakfast, sometimes I make a smoothie which includes the following, I may have posted this already, so forgive if I am repeating myself:

Half a banana, half an apple, you could also add some blueberries or red berries if you want.

1 small home grown leaf of spinach or kale if you have it

2 teaspoon of ground wheatgerm, also 1 teaspoon of ground linseed if you have it.

Add all to blender and cover with Milk of your choice, I use Almond, Rice or Oat Milk

Add 2 dessertspoons of live natural yoghurt

Blend all together

~Enjoy your smoothie - a meal in itself :)

It has to be eggs. There's nothing simpler and you can serve them in whatever way your mood dictates.
