Here's a vegetable cottage pie that I made and instead of boiling and mashing potatoes I just grated raw potatoes and sprinkled with sesame seeds cracked black pepper and a little ground ginger on top of the filling of white onions sweet peppers chilli chickpeas broccoli carrots with ginger cumin coriander turmeric black pepper with some peanut butter Tamari and a little stock.
I love grated potatoes as you can make really easy and quick patties, great for a gf breakfast.
This is gluten free and plant based so free from and filling. π
Jerry can I ask you ...how did you go about losing weight? Did you count cals ? I have been doing that over the past 7 weeks but I am still trying to find the right approach. I have a healthy bmi and have lost a stone so far but I would like to lose ideally 2 more. Feeling a bit confused. I love your menus but feel that I need to lose some more weight before I can have food like that. Thank you. Any advice appreciated. π
Thank you Brightfeather, I think that you've done really well losing a stone.
I've never been over weight and my weight has varied between 10 and 10.5 stone most of my adult life until I joined HE and that has really sharpened my knowledge of nutrition and I'm now around 9.5 stone and trying to put on weight, I'm 5'10 have a 30' waist and 38' chest and my BMI hovers around 19+ so I'm lean.
But and there's a big but, I'm a coeliac and gluten has also attacked my colon so I have microscopic colitis so I have to be very careful with what I eat. I'm also a live wire so have lots of energy and I cycle and walk a lot which helps keep me fit.
I don't eat sweets or processed foods drink alcohol or eat meat and my body doesn't like most saturated fats. So I think its also what I don't eat that keeps me lean.
So my advice is keep up eating well and with regular exercise you will achieve your goals and most importantly its portion size. As my medical condition keeps me lean too.
Thank you so much for your reply Jerry. I have been organic wholefood veggie and then vegan for most of my life. Also have always been very active until the past 2 years. Got into bad habits with fast food vegan stuff . Just need retrain my brain with portion size. Ok thank you π
That looks delicious, I like the idea of grating potatoes I find boiling then mashing makes them soggy. I sometimes microwave then mash them which helps. Lovely xx

Have you ever tried it with sweet potato as an alternative. Sweet potato contains vitamin C, thiamine, potassium and manganese. Love your recipe. Very healthy.

Very good. You have managed to get a lot of protein added, also. I like you sweet potato one, also.
You could also try grating carrots, parsnip and swede together, for another alternative.
Whilst you are at the food mixer, try this tasty treat.
2 bananas. 4 apricots, a tub of cottage cheese, spoon of sesame seeds, 2 spoons of flaked almonds. A dash of almond milk. tsp of cinnamon and mix the lot in the mixer. WOW!!!!!!
