My health has improved now. I'm really puzzled as my Insulin Resistance has doubled in three months but HbA1c has reduced from 6.5 to 6.2 % and lipid profile parameters have significantly improved.

Your FBS IS slightly more. Some 15/20 years back the ideal level was 80-120. But subsequently changed to less than 100.
But going by your HbA1c it seems to be under control. You can continue the present pattern of food and medicine, of course guided by your physician periodically
At the first sight, you seem to be doing well with reference to your Hba1c.
But , actually your insulin resistance has increased...not a good sign..
Then I thought there would have been some error in your fasting insulin levels....but your body weight increase seems to be consistent with your high insulin levels...
Persistent High IR may lead to gradual defunct of beta cells...
Anyway , nothing to worry... Suggest following course of action....
(1) Your aim should be to reduce your body weight by a combinations of multiple strategy i.e a low calori diet ... control carbs .......Intermediate fasting ... (Read IDM) .... Physical exercise.....
Reducing your weight will directly enhance your insulin sensitivity......
(2) Consult your physician and start taking an insulin sensitiser such as Metformin .... 100 years old workhorse....
Apart from enhancing insulin sensitivity, it would also help reducing weight.... May be once you achieve your goal.... You may reduce or even stop the Metformin gradually ... Metformin would also help lowering your blood glucose ..it would also act on liver to stop glucose production and reduce insulin response and insulin levels....

As the fasting serum insulin was measured only on one day i.e 27th Feb 2020 in my case and is not an average for the entire duration of 3 months like HbA1c, i guess we're okay here.
How can Insulin Resistance increase when HbA1c has reduced?
My body weight has increased only 700-800 grams and when my bodyweight was three kilos more than what it is now, fasting serum Insulin was only 13+ myu-IU/mL six months ago.
If there is a similar measurement of Fasting Serum Insulin for a period of three months and if the average IR is found high, then i agree that i need to take action.
When i took FBS and Fasting Serum Insulin on that particular day, i had paneer and Chapati as my dinner the previous day. I found that paneer always increases my FBS as evident from my historical glucometer readings.
The biggest change in me in the last few months is that i can withstand hunger for hours together comfortably which was never possible is last 20 years or so (when i was in my teens).
Recently, I have now become fascinated with Intermediate Fasting and have started looking into videos of Dr. Eric Berg and Dr. Jason Fung on the same.
On the exercise/physical activity front, I have added 10- 15 Kms of cycling (weekly once) along with my regular 5-6 kms daily walk.
One other suggestion is to repeat my Fasting Serum Insulin test (@sandybrown suggested that i repeat all the tests viz. Lipid Profile, FBS, etc). Please provide your comments on the same.
Your numbers looks a little puzzle to me tooo...Yes, you may like to repeat tests as suggested by sandy....
However, my only suggestion would be try to reduce some weight by scientific ways ... You are already doing a lot of physical activities.... More than what i thought ....IDM.... Cycling....
Your hsCRP is also towards higher side ...indicating that you tend to develop body inflammation a bit..... For example my hsCRP is 0.1 mg/ L......with whole plant food...
Further , I would also recommend you that you consult an Endo and as per his advice , please start taking Metformin which has all synergistic effect for a person like you....
