Hi, this is such an easy dish I got from an Instagram guy ( kitchen_of_dad ). I wanted to try it seeing as we were in Spain at the time. So I put the recipe in my blog. It's so simple, tasty and filling - it's now on our list to do often ! Called Spanish fish, essentially cod ( or any white fish), with 1 tin tomatoes, 1 onion, 1 red pepper, 1 clove garlic, 1/2 lemon, 1 TEASPOON smoked paprika, A handful chopped parsley, A handful of black olives. ( I didn't have olives in - I usually use a tin of black stoned olives) so you can see what I substituted, also there's a substitute for the smoked paprika that's good to have in. Got to be low calorie too ! Enjoy.

Ooh that does look/ sound good! I've never cooked fish before except chip shop style so I'm nervous about trying, but this one doesn't look too scary 🤣
exactly. I feel the same. Cod is so easy. I haven't tried it with frozen cod but would imagine that would work, but give more liquid. I'd defrost first. There's nothing to do with the fish except sit it on top of the sauce and put in the oven... tada ! The other easy way I like fish is 'en papillote' . Basically put it on baking / parchment paper, season and even add some carrots or onions or leeks or all, fold over leaving space above it like a steaming bag and twist the sides loosley. Bake in the oven and it makes a lovely moist fish dish. Just have it with salad or potatoes or rice.
aha no I haven't. I know the pic is of Paul and me but we could both do with joining a weigh group. We don't possess any scales but when we get back to the other island there's a chemist down the road that has scales. Maybe I'll do it then.
