Self-crusting corn quiche

For anyone who enjoys quiche but not the calories, here's an alternative. This is lovely cold or hot.

Preheat oven 200*C.

Put 15g butter in a frypan and thinly slice 150g onion, cook over low heat for 10minutes.

Scrub and finely dice 250g potato, steam or boil for 10 minutes, drain and pat dry in a clean cloth.

Drain a tin of sweetcorn and put 200g into a large quiche dish along with the steamed potatoes and sauteed onions.

Put 200g cottage cheese with chives, 3 medium eggs, 50g s.r.flour, 1/2tsp salt and 1/2tsp smoked paprika in a blender and blitz until smooth. Pour this over the veggies in the quiche dish, slice a large tomato thinly and place on top of ingredients.

Bake for about 25 - 30 minutes, leave to settle for 5 minutes when you take out of the oven before serving.

Total calories for entire quiche is around 1025, this serves 4 - 6 people. So 256 - 170 kcals per slice.

Hi Flossie, I have never tried to freeze it hun - never any leftover to freeze!! This does keep well in the fridge for a couple of days though and reheats in microwave well too. I usually have 1/4 of the whole with a big leaf and red onion side salad for 300 kcals. ๐Ÿ˜Š

We'll have made it and had with large salad, delish, problem is how not to eat the rest !!!

I am going to try and freeze one piece, and put rest in the fridge

Glad you enjoyed it Flossie. It's one of my stalwart recipes and I add other bits n pieces sometimes if I have them to use up. I have left out the sweetcorn and sauteed 200g mushrooms with the onion instead, or added bits of ham, even a little minced beef! The quiche dish is your oyster, lol. ๐Ÿ˜Š๐Ÿ˜Š

Sounds good. As a vegetarian who is gluten intolerant all I have to do is change the flour. :)

I was thinking that too. It's almost like a pancake mix where you can swap things around quite easily. I would change the butter and cottage cheese as well too, being dairy free, or leave it out.

It really needs the tiny amount of fat used, but a dairyfree fat would work just as well. I have made it with quark instead of the cottage cheese and also a dairyfree cheese spread ( for a young charge at work) though it isn't quite as nice. Do use chives though, the flavour is too good to miss out. ๐Ÿ˜Š
