Hi, can anyone reccomend a recipe for breakfast muffins for those days when you need something quick, filling , healthy and low carb high fat?

Raspberries

Double cream

Instructions:

Whip cream

Put cream on raspberries

I mean if you think it makes you put on weight, are you sure it’s the cream not the apple crumble etc that we normally put with it. I eat cream every single day. But no sugar. AT ALL.

No I am intolerant so I have to hog the toilet for the rest of the day. It really is a case of in one way and out the other!!!

I don't know much about lactose intolerance (assuming that is what you suffer from), but a couple of tablespoons of extra thick double cream only contains 0.5g lactose. If you are feeling brave, maybe that would be worth a try? Check the label before buying.

Some lactose intolerance suffers can eat Greek yogurt, where some of the lactose has been consumed by the culture and more has been drained off. If you wanted to add some dairy fat to your diet, you could cautiously try either.

You can also get lactosefree cream, we use that all the time and to me it tastes the same :) It must be the lactofree brand though as the others aren't always beatable

Check out the recipes on Dietdoctor.com, I am amazed at the variety and I'm sure some can be adapted...I'm already hooked :-)

Have a look at: sugarfreelondoner.com. There are loads of recipes. I use coconut or almond flour to make pancakes and erythritol as a sweetener. I’ve made cupcakes and banana bread and they’re very tasty. 90% black chocolate is the best to use in choccie recipes.

I like the sound of that , thank you. It would be a shame to stop baking for my family but it would be nice to learn some healthier options
