This is an entry for the 'mayo off' Lytham :)

We were lucky enough to be given two small lobsters by a fisherman friend, but this recipe can be used for any fish, or even chicken.

INGREDIENTS

3 tbs butter

60mls double cream

1 tbsp fresh lobster juice from lobster optional

1 lobster tail

2 lobster claws

(the sauce is enough for two, so approx 200g fish/chicken)

Half of the Alfredo Sauce

1/2 tsp lemon juice

1/2 tsp chives

Salt and pepper

spiralised courgetti

Alfredo Sauce

1/2 tbsp butter

60mls double cream

1.5 tbsp MAYONNAISE healthunlocked.com/nhsweigh...

dash ground nutmeg

75g parmesan

SERVES TWO

INSTRUCTIONS

Add butter, juice from lobster and cream to pan. Cook for 2-4 minutes on medium until it thickens.

Add Alfredo sauce, lobster meat, lemon juice, and season with salt and pepper. Simmer 3 minutes on low.

Add chives. Top over steamed courgetti.

Lobster! You're raising the tone!! I love lobster but rarely have it.

It looks a great sauce and versatile, as you say :)

Mayonnaise in alfredo? Clever, gets you the emulsion without the work and without the starchy pasta water.
