I have been enjoying the recipes on the forum Here is one I would like to share
Ingredients
2 tbsp oil
1 chopped onion
14 oz can chopped tomatoes
2 garlic cloves crushed
600mls stock or a mixture of white wine and stock
4 ozs red lentils
1 tsp dried thyme, 2 tsp ground cumin
3 tbsp dark soya sauce
1/2 fresh chilli or to taste
1 tsp ground mixed spice
8 ozs red kidney beans
Salt and pepper
Method
1 Heat the oil and the fry the onion
2 Add tomatoes and garlic and cook for 10 minutes, then stir in the stock
3 Stir in lentils, thyme, cumin, soya sauce
4 Cover and simmer until the lentils are cooked
5 Stir in kidney beans
Serves 4 - 291 cals per portion
