Indian Cabbage Stir Fry - 347 calories

For two VERY LARGE portions, or three regular!

Ingredients

Savoy Cabbage -300g

Butter -22g

Onions -132g

Celery, 2 sticks -93g

Lamb, Mince (20% fat) -250g

Curry Paste, Tikka, Finest, Tesco-100g

Garlic -1 Clove/3g

Fresh Coriander Leaves -1 Bunch/20g

White Wine Vinegar -1 Tsp/5ml

Pepper, Black, Freshly Ground -½ Tsp/1g

Salt -¼ Tsp/1.25g

Preparation:

Peel and finely dice onion. Peel and finely dice garlic. Wash celery and finely chop. Finely shred the cabbage and remove tough stalks.

Method:

Melt half the butter in a pan and add the cabbage. Stir over a low heat stirring regularly (don't allow to brown). Continue to cook and stir until the cabbage is softened. This may take a while. Once cooked, add the white wine vinegar, salt and pepper to taste.

Add the remaining butter to a large pan. Melt over a medium heat. Add the onion, celery and garlic and cook until softened. Add the minced lamb and stir, turning up the heat, until browned.

Lower the heat to low, add the tikka paste and continue to cook for about 10 minutes stirring regularly.

Finally, combined the cabbage and meat mixtures and continue to stir over the heat until warmed through. Add the fresh coriander and serve - with a spoonful of soured cream or mayonnaise.

This is a meal on it's own, but you could add some naan bread.

Whoops! Yes, I forgot that vital information. Have now added to my original post. The recipe quantities I followed were for 2. But we'd have struggled to eat it all. So serves 3 in my opinion!

As courgettes are difficult to come by at the moment, I'm using savoy cabbage more - but love it! Especially stir fried...

No butter beans in this recipe - and the above serves 3.... I followed the recipe for two portions, but was way too much, so have a good portion remaining.

Awww, I do spend a lot of time looking for recipes to adapt (and enjoy!) As I log all of my food, I have to create a "recipe" based on the calories - plus I always add or change things. In this case, less meat (250g instead of 300), added the celery (low calorie and full of fibre, so adds some bulk and crunch - plus lovely flavour!)

I never mind sharing!

I have just added the ingredients to my shopping list, it is for tea tonight. Will need to use quorn mince as veggie daughter and four grandchildren have just booked in for a play afternoon and tea - how lucky am I? They are wonderful, all of them.

I also love cooking and altering recipes. I use a super app called Paprika and organise a kind of "contents list" on OneNote. I will be back at work early March so need to be very organised.

Quorn should work well. You may need to add water/tinned tomatoes as the lamb mince I used (20% fat) added moisture and richness. Any curry paste will do. The tikka isn't one I would usually go for, but will be using again! Nice and fruity!

Enjoy your afternoon - no grandchildren myself yet (my daughter is 20 and at Uni) but maybe one day.... :D :D

Hi Pineapple. It was ok with quorn but as you said really needed the succulence from the mince, I added some passata and sliced mushrooms. Had it with a few spicy chickpeas. Daughter and son in law loved it, husband not so keen. I will try again with lamb mince and use my own curry paste.

Yes, they are a cross between brussel sprouts and kale. Look like baby cabbages (brussel sprout size). I have a dark leaved variety. Looking forward to trying them.

I agree about cabbage and bacon. Add a bit of cream in too.... and then some grated cheese.... mmmmmm.
