Carrot and Orange Soup

f you like carrots and oranges then you'll love this soup. Ideal for when you have a cold with all the vitamin C. Serves 4

15 g butter

i onion, chopped

6 chopped carrots, I prefer to just wash them rather than peel as all the goodness is in the skin,

Grated rind and juice of 1 orange

1 bay leaf

500 ml vegetable stock

Salt and Pepper

Chopped parsley or chives to garnish

Melt the butter in a saucepan and cook the onion and carrots gently until softened.

Add the orange zest, bay leaf and stock and bring to the boil, simmer for 30 minutes.

Remove the bay leaf and add the orange juice and season to taste. Puree in a liquidizer. Reheat gently and serve hot with parsley or chives.

I like a swirl of creme fraiche or yoghurt on top.

Enjoy.

Hello, morgancando. I have just made this soup and have found it easy to make and quite sustaining too now the weather is colder, and generally with a few croutons on top. In fact a mug of this is what I have had for my lunch for the last few days. But how many calories are there in a mug of this soup, do you think? I am not at all sure how to count calories in home made food. Do you have any tips on how to work it out, please?

I’m not at by home just now but I’ll get back to you later. I’m sure one of our lovely forum friends will be able to help you with counting calories.

Hi Gill08 . The soup has 572 calories in total and it serves four so for one serving there's 143 calories. Just list all the ingredients one at a time to find the total.

Most people use the My Fitness Pal app to log their calories but I use My Net Diary.

Thanks, morgancando. I have been using the calorie counter on this website and don’t find it too easy so will look at the My Fitness pal app as you suggest. Thanks again for a delicious recipe!

Both MFP and MND are free so you could try both out and see which one you prefer.

Btw the recipe is from a book called Body Foods For Women by Jane Clark. Lots of lovely recipes in it.
