The pastry couldn't be any easier: mix 2 cups of almond flour/ground almonds with 1 egg and pinch of sea salt. Mix and roll out. It'll be quite crumbly, but fit into a quiche dish or smaller dish if you want a pie. Slowly fry 3 sliced onions so they're caramelised. When cool, stir into 2 beaten eggs and handful of cheddar cheese. Bake the pastry base for about 12 mins, then pour mixture in and bake for about 25 mins on 200c.
