Here's this evening's meal. It's so easy, filling and tasty.
For two: drain and rinse two cans of cannellini (or butter) beans. Drizzle some olive oil in a baking dish. Mix the beans in the dish with a tin of tomatoes. Halve a bulb of garlic and place it in the mixture (you'll need to squidge the cooked garlic out of their 'paper' after). Add 1/4 cup water and 2tbsps of harissa paste. Season. Bake in hot oven (220c) for an hour. Then remove from oven, make four little wells in the mixture and place an egg in each one. Turn the grill on and place under grill for two minutes so the eggs are just slightly firm. Serve it with crumbled feta or cream cheese on top and a scattering of herbs.
