So many people struggle to come up with ideas for lunches, when they decide to reduce the amount of bread they eat. No longer can the humble sandwich fill the gap. But have no fear, there's definitely life after bread and I'm here to give you some ideas.
My list is short, compared to the endless possibilities and I hope you'll all chip in with your ideas and favourites.
My pictures described (top left to bottom right) I apologise for the quality! They always look fine until I put them on here!
1. Lettuce boats - using the leaves of little gem lettuce to hold the filling, rather than bread. Mine have scrambled egg and tomato and tuna and cucumber, but honestly, you're only limited by your imagination.
2. Egg wraps - thin omelettes stuffed with whatever you fancy, rather than wraps. Mine have cheese, ham and tomato and salmon and cream cheese with garlic and herbs.
3. Dips and crudites - I have cream cheese, pate, guacamole and hummus.
4. Selection of spicy meats, cheeses, olives and pickles.
5. Soup - any kind, mine just happens to be chunky beef and vegetable.
6. Salad - not just a couple of lettuce leaves with a few slices of tomato and cucumber, but an explosion of taste, texture and colour. See just how much variety you can get into it.
7. Roasted veg - add some crumbled feta, smoked mackerel, or whatever you like.
8. Crustless quiche/omelette/egg muffins, with any filling.
9. Meat loaf - which can be sliced and eaten cold.
All of these suggestions can be packed up and taken to work with you. Find a selection of cheap containers, with individual compartments and nothing needs to get ruined en route. A wide necked flask for leftovers is a good investment and if you have access to a microwave, you're laughing, because you can batch cook, freeze and zap.

My daughter makes some very nice low carb flat bread (very very nice flat bread) they go particularly well with left over curry for lunch. I like to add in some salad for extra crunch.
My favourite are leftovers from a diet doctor keto recipe! Keto pizza does nicely! But if I don’t have leftovers I tend to buy something out or make a salad or omelette at home. I will definitely want to try these out!
I think he isn’t quite in the LCHF place yet. He eats LCHF for supper with me but I think I’ll need a couple of months & another stone off me to persuade him. Then I think he’ll be up for shrinking his tum in the same way.
I've never liked wraps, always thought it was like eating a face cloth but those thin omelette ones look great. I probably wouldn't have them at home but for a packed lunch. I made a meatloaf this week and that will do ages - with hot veg or a salad.
Now I just have to find where among my enormous pile of bookmarks to save this

It's funny how much of British life revolves around sandwiches (made with sliced white "bread", of course, and often crammed down in 10 minutes at your desk). What we need, I reckon, is a revival of proper lunchtimes - the way the French and the Spanish do it. Just taking the time out to eat some actual food at midday instead of the fastest possible option must surely do some good for the national health and stress level.
Of course, if you're an LCHF adherent, lunch is probably going to be no more than a cup of coffee and a scotch egg, cos you just aren't hungry

Poached egg on courgette: I slice the courgette diagonally, quite thick, fry in olive oil or butter on a griddle pan to give it some stripes, add a few chilli flakes and then poached egg on the top.
I used to be a big sandwich eater (every way you can put those words together) but now my lunch is usually egg-based, particularly frittata. My favourite is red onion, red pepper (or any colour I have in), chorizo, halved cherry tomatoes, a couple of eggs, topped with cheddar and finished off under the grill
I used to love a salad for lunch I need to get motivated to actually Prepare for lunch at work the next day. I used to do it! Given me some inspiration
I have just been given this link by Subtle_badger in the Healthy Eating Forum when I was asking about picnic lunches, and it is so good I thought I would bump it up the feed here for people who might not have seen it or forgotten it.
Great Post with some good ideas. I like the sound of egg wraps. I've just discovered sweet potato flatbreads. They also make a good pizza base. I followed the recipe from slimmingeats.com.
