Weekly menu

Hi there. i have always done a weekly menu for our diners but never for lunch or breakfast. So a new habit is to include these too. I am not great due to time constraints posting on daily diary so here is my week plan. if anyone wants any more details for any of the meals do ask.

What a varied and interesting week you're going to have :)

lunch is my absolute nemesis. I always end up having a soup and a roll. Gotta love a soup but need a bit of variety! :-)

I love soup but it seems a bit wintery for this weather. Lunch usually involves eggs for me

same here. I feel a total con having soup in high temperatures. I love a salad and have over last few years learned that it does not have to be just lettuce and tomatoes.

Wow, really impressive! Love the tapenade (is the ricotta in it, or separate from the olives& anchovies?) and the rest of the menu looks so so tasty

Any recipe links would be appreciated

No I put a spoon on ricotta on top of it. Something I tried for canapés for having a party and loved it.

Love it! You can switch days at any point. It's just a guide.

Ha, ha, ha. You can't go wrong with ricotta and oat cakes - Scottish one :-)

I’ll try a Scottish one if I have to 😂

Thanks though... that day is tomorrow here. Slight adaptation for being veggie, but that’s my fuel for tomorrow.

Great idea - i started similar doing this but found i'd change my mind after a few days and it didn't work for me. I still do something similar - when i do my shopping i have a list of ideas and then buy ingredients for certain meals, i just don't set days so i can chop and change a bit depending on what i fancy :)

Some great sounding food on there - how do you do your sweetcorn pancakes with bacon? Just a basic pancake mix plus the sweetcorn or any twists??

It's a Waitrose recipe. Latest issue. I find their magazine excellent as it is always seasonal food. 150 g sweet corn kernels, 2 large eggs, 120g self raising flour, 10 ml whole milk , 20g unsalted butter , 2 tbs lemon juice and smoked bacon plus maple syrup. Eggs and sweet corn in blender until half blended. Add flour, milk melted butter, lemon and a pinch of salt, then pulse some more. Fry on butter. Enjoy :-)

Thanks for that, it caught my eye too and I was just looking up sweetcorn and courgette fritters on BBC Good food

Sorry that was meant to say 100 ml whole milk:-/

I think that might have to be my breakfast / brunch on Sunday! :)

Thanks for sharing!

That could work well for me as I was wondering yesterday as to what to do with the sweet corn in the garden.

Thanks and good luck!

Wow, that's incredibly well organised. I'm in awe. I often have a rough idea of suppers for a few days but usually only think about breakfast and lunch the day before. I particularly like the idea of the shredded courgette and couscous and also was wondering what the ricotta cakes contain?

Teenage son informs me he'll be out this eve. Plus side is I can eat something he wouldn't eat! I'm going to do stir fried prawns with garlic and ginger and red pepper, tenderstem broccoli and courgette and some brown basmati and wild rice. Breakfast was one slice very dark rye bread with cream cheese and smoked salmon. Lunch - probably salad and houmous. We're off on holiday this weekend so I'm using up whatever's in the fridge.
