I know you've missed my recipes! Here's one! Hope you like it!

Quorn (soya) mince can make a healthy alternative to beef mince - I always add other vegetables (onions, a finely diced carrot and celery) to boost the flavour.

Ingredients

Onions -145g

Garlic, 3 cloves -10g

Italian Tomatoes, Chopped -1 Can/400g

Colman's Chilli-con-carne sauce mix -1 Packs/50g

Celery, 1 stick -66g

Carrots, 1 medium -77g

Quorn Beef Mince -200g

Olive Oil -2 Tsps/10ml

Red Pepper -90g

Double Concentrated Tomato Puree -1 X 70g Pot/70g

Herbes De Provence, Dried -1 Tsp/2g

Water, Mineral Or Tap-1 Glass/200ml

Preparation:

Peel and chop the onion finely. Peel and chop the garlic finely. Peel and finely dice carrot. Finely dice celerey. De-seed and chop the red pepper into bite sized chunks.

Method:

Put the oil into a large lidded saucepan and heat over a medium heat. Once hot, add the onion, carrot and celery. Fry, stirring regularly until the onion is translucent and soft. Add the garlic and cook for a further 5 minutes.

Add the tinned tomatoes, the water, chilli-con-carne mix and puree and stir. Lower to a simmer and allow to cook (covered) for around 30 minutes, stirring regularly.

Add the Quorn mince and stir until cooked through. Stir and cover with a lid. Lower the heat and continue to cook for around 20 minutes stirring every 10 minutes.

About 10 minutes before the end of cooking time, add the beans and dried herbs to the chilli mixture and stir thoroughly.

Mmmm. That looks tasty.

Quorn is such a useful product isn't it? I use it a lot in mince recipes. In fact last night I made a very tasty Quorn Bolognese with quorn mince, chopped peppers, onion, leek, tomatoes, herbs, red wine. It was for supper with my son and girlfriend, who is vegan.

You do have to ensure it's well flavoured though... I only used "two" portions but managed to get 5 portions of it by bulking up with the vegetables and tinned tomatoes, etc.

I agree! I am using up the last of my Quorn from the freezer....

Interesting one to try out on the family, not sure if they will like chilli but worth the try as often have quorn mince in the freezer.
