1 large bell pepper (I had an orange one), chopped
4 large tomatoes - diced (and keep all juice)
20g butter
50ml good rapeseed oil
Salt and pepper
Take a good heavy-bottomed pan, melt the butter, add the oil, then all of the other ingredients except the beans. Soften the ingredients very gently over a low heat for about 30 minutes, until they are very soft and caramelised. Add the Beans and some hot water as needed and stir through. Warm the whole dish through to gently bubbling over a low heat, simmer for a further 10 minutes, season with salt and pepper to taste.
I stirred through some diced beetroot and gorgonzola cheese prior to serving.
It serves 2 and was very tasty...

Definitely ! Oh just be careful with the grapes and apple, full of sugar (albeit natural)
I tell you what else I've discovered and always avoided because of the fat content, avocado ! OMG ! It's divine, can't believe I've lived without it all this time! x
Ummm... olives, sundried tomatoes.... there may be things I can replace the grapes and apples with. Although slices of apple have currently replaced biscuits with cheese
They are good and joined in the nhs plan, but I think they are finding the low carb harder to deal with. But today was the first time they had potatoes all week, so I'm slowly educating them
