Creamy chicken tikka without the rice! 336 calories

Ingredients

Onions -203g

Peppers, Red -168g

Vegetable Oil -9ml

Chestnut Mushrooms -265g

Tomatoes, Chopped Tinned - 400g

Fresh Coriander -1 Bunch/20g

Tesco Finest Tikka Curry Paste - 100g

2 x Chicken Breast Fillets -382g

Double Cream -100ml

Method

1. Dice onion.

2. Put oil into pan and heat on a gentle heat.

3. Add curry paste to onions, and heat until melted.

4. Chop chicken into bite sized pieces and add to curry paste, stir until it is coated. Continue to cook until meat is sealed.

5. Dice pepper and add to mixture, heat for a further 5 - 7 minutes.

6. Chop and add mushrooms to mixture, cook for 5 minutes.

7. Add tin of chopped tomatoes and stir in. Bring back to the boil, turn down to a simmer and continue to cook for a further 20 - 30 minutes, stirring occasionally.

8. Add the cream, stir through and add some fresh coriander (if required) 3 - 4 minutes before the end of the cooking time.

Well I added about 80g of lentils to my sauce tonight. I can't say I could really taste a difference, but the texture was nicer. I shall add more next time. I will try out some of the recipes you put up yesterday.

The secret is to bulk the meal out using plenty of low calorie veg (mushrooms, peppers, onions). The addition of cream may seem a bit too generous in terms of calories, but it is worth it - we both agreed that the cream made this meal extra special! And of course, I cut the calorific processed carbs (rice) that don't really provide much in terms of nourishment for the greens.... so I could afford the indulgence!

You could use any sort of curry paste - this was lurking in the fridge and we're presently using up things from fridge and freezer!

I use cream all the time and also don't eat rice, so this is perfect for us! :)

Would crème friache not be a good choice, I tend to use it for creaminess, I love rice too, limit myself to half a portion these days!

Hi I do a very similar recipe but missed the rice, so now I make cauliflower rice, it goes great and the calories are next to nothing for a big pile.

I kind of put myself off cauliflower rice by having it too many times last year! Haa haa..... But I agree, a great alternative, and much more filling, better for you and many less calories!

I agree it can become a bit boring, have you tried using lentils as a rice type extra or humous that's nice and low cal if you don't add oil, I use herbs, that's it I'm hungry, off to forridge

That's a great suggestion and gues one wouldn't need a huge quantity?

I'm also very happy to use mashed swede, steamed or stir-fried cabbage - or a mixture (tonight is a leek, cabbage and pea stir fry!) Going to have it with a turkey steak cooked in a creamy mushroom sauce.... mmmmm
