Hello everyone I made a very yummy ham and potato soup tonight and those who have tried it have given it a lot of praise so I thought I would share it here. I do not know the calories unfortunately but it is very healthy and very filling.
It serves 4-6 people and takes about 15 mins to prep and 30 mins to cook.
Ingredients:
4 slices of bacon, 1 cup diced onion, 1 cup diced carrot, 1 cup diced celery, 3 tbsp flour, 2 cups of cooked ham, 2 cubed potatoes, 6 cups of chicken broth (1 stock pot), 1 tsp thyme and 1 tsp pepper.
Step 1: Cut up the bacon and fry it on a high heat until crispy.
Step 2: Add the onion, carrot and celery and cook for 3 minutes (still on high heat).
Step 3: Reduce the heat to medium and add the flour. Stir constantly for 2 minutes to avoid lumps.
Step 4. Add the cooked ham, potatoes, thyme and black pepper and stir well.
Step 5. Add the chicken broth.
Step 6: Cover and bring to the boil and then reduce the heat to medium-low and cook for 30 minutes.
I've included a photo as that's what it should roughly look like when cooked and you can do it all in the same big pot. I won't take the credit for this as I found this recipe somewhere but I did change it up slightly and this is my own little version of it. I'm very shy about things like this but I wanted to share it so there it is. It tastes better than it looks! Have a great rest of the week!
