*Our BBQ Chicken is marinated in things like lemon juice with soy sauce, pepper, and onion or sometimes just brushed with melted (grass-fed) butter and garlic. We do not ever buy commercial bbq sauces, we always make our own at home, and no sugars!

Yesterday....
For dinner I ate:
4 BBQ ribs (marinated in lemon juice and soy sauce)
A good portion of fresh cut green beans sauteed in butter, garlic, salt, pepper
And, 1/4 cup of rice (which I opted to have because I thought the cake messed me up enough, that 1/4 cup of rice wouldn't do any harm worse at this point
Baked Honey Thai Fish
Tonight I made up a marinade/sauce with ginger, garlic, soy sauce, honey, chilli, lime juice, sesame seeds, spring onions and coriander.
My Day
For dinner I cooked chilli and lime chicken with mashed sweet potatoes with chives folded through, chilli and garlic broccolini, steamed carrots and cauliflower and a sprinkle of coriander. And then, after reading about the banana pancakes in the article I shared in my last post I gave it a try.
Long time, no post...
Since I was last there all the leaves have unfurled and the early-summer wildflowers have come into bloom (oh, and the wild garlic has brushed its teeth, thank goodness!). Not a single twinge or complaint from the Achilles.
Baked Salmon with Black Pepper and Garlic
This is how I always make my salmon.
1/2 teaspoon of olive oil on each 120g fillet, freshly crushed black pepper, finely chopped garlic and a sprinkling of sea salt. Comes in at 270 calories per fillet. It is very easy and no fuss to make and just bung it in the oven.
