This morning I went for a walk to and through the local bird sanctuary. There are observation huts where you can sit and watch the water birds and read about the local wildlife. There is a boardwalk connecting the islands over the wetlands (and no I don’t live in one of the mansions in the picture).
For dinner I cooked chilli and lime chicken with mashed sweet potatoes with chives folded through, chilli and garlic broccolini, steamed carrots and cauliflower and a sprinkle of coriander. And then, after reading about the banana pancakes in the article I shared in my last post I gave it a try. I mashed a banana, whisked it with an egg, added a dash of vanilla essence and cinnamon (not in the original recipe) and cooked it in coconut oil. I topped it with maple syrup, blueberries, raspberries, nuts and a dollop of cream. I got a big thumbs up from my husband and I enjoyed it too.
