Hi everyone,

These are my vegetable fritters. They are so tasty. I have made them lots of times now and you can pretty much put in any odds and ends of vegetables that need using up and they are delicious. You can’t go wrong. May also be ideal for a packed lunch at work.

It’s basically any stir fried vegetables chopped up small. This time I used grated butternut squash, leek, garlic, chilli, onion, sweet corn a little cauliflower and mushrooms.

Make a medium to thick batter with gram flour and cold tap water. Season with salt pepper and fresh or dried herbs. I used dried. (Mixed dried Italian herbs, basil, black pepper, turmeric and parsley). Stir in your vegetables and leave to stand for 5 minutes. Then fry with either olive oil, coconut oil or dry fry with no oil.

I make these a lot now after having little success with making vegan burgers that didn’t fall apart. You can also just put plenty of thinly sliced onion in the batter and have onion bhajis.

Hi Ali,

These fitters look dilish. Please also try with a similar batter some cauliflower, my friends kept insisting they were chicken nuggets. 😇

Oh wow, so the batter and finely chopped cauliflower. Is that all? That reminds me these ones had a little cauliflower in too...Ali 😁

Hi Ali,

Just cut the florets in reasonable sizes (about an inch) put in hot water, then dry the florets, sprinkle some seasoned dry flour, then dip in batter and deep fry.

(Gram flour batter with spices and using the black salt will enhance the flavours.) 😇

Umm, Very tasty. We had them with baked potato and homemade coleslaw 😋

That would be an idea meal for me, I bet the homemade coleslaw was made with Hellmans vegan mayo - Delicous

Yes, I once had them with homemade harissa. Have you tried Hellmanns Vegan Mayo? It’s absolutely delicious. 😁🌱

thanks, a few times I have seen a recipe then never managed to find it again (most likely due to my own technical incompetence, or not remembering something specific enough to search by ('oooh, I fancy that nice sounding thing with the cauliflower' lol)

I am about to get my brothers old phone which is a huge improvement on my own, after which screen shots will be a brilliant solution for me! that is a great idea, thanks :)

That sounds good. Oh I know exactly what you mean. I have an iPad and I have an album of all the screen shots of food I like the look of. So I whiz through it and get inspired to cook something I had forgotten all about. 😁👍
