Why has my blood sugar level gone High on very low carb diet?
For dinner just salad; broccoli,
capsicum
and paneer sautéed in olive oil and sprinkle of apple cider vinegar and lemon juice. Also, in the last about 40 days i have gained 5 kg weight, on this diet only. I am 51, 6 feet tall, had my weught around 74 now it is 79. Worried 😟.

Vegetable Frittata
Last night I cooked up a frittata with roasted sweet potato, zucchini, carrot, onion,
capsicum
, mushroom and cheese. I put all the veggies in an oven dish then poured over a mixture of 6 eggs, milk, salt, pepper and paprika. There’s plenty left over for tonight’s dinner too.

I thought I’d enter this dish into the ‘mushroom off’ but I think I might’ve dreamt it as I can’t find any other entries? Anyway, here it is, taken from yesterday’s Feast magazine in the Saturday Guardian. Heat 30g gram flour (chickpea flour) in a pan, stirring until it browns a bit. Stir in a tbsp butter
