I've been busy in the kitchen today and the first thing I made was a One-Pot African Peanut Stew. I swapped out a few things i.e. onions and garlic, I used Hing so it could be low fodmap and I used my homemade low fodmap veggie stock, I also used olive oil infused with garlic instead of grass fed butter. I did make a mistake and picked up a 2 litre jug instead of 1 litre and double the amount of fluid - oops, didn't matter as I added some thickener and then put it in the liquidiser, that'll be tonight's dinner. Here's the recipe:

I made a Cream of Carrot and Parsnip Soup (this is one of my favourite recipes in my low fodmap cookbook:
1 1/2 lbs mixed carrots and parsnips, peeled and cut into 2-inch pieces
3 1/2 cups water or Vegetable stock
1 large potato
2 tablespoons garlic-infused olive oil
1 1/2 tablespoons light brown sugar or unbleached cane sugar (I used coconut sugar)
1 tablespoon peeled and grated fresh ginger or 1 teaspoon dried ginger
1 teaspoon dried thyme
1/2 teaspoon sea salt (I used Pink Himalayan Salt)
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne (optional) - I used it
1 cup light coconut milk (I used ordinary full fat coconut milk)
Put the carrots and parsnips in a large soup pot. Add the water, potato, oil, brown sugar, ginger, thyme, salt, pepper and optional cayenne and bring to a boil over medium-high heat. Decrease the heat to medium-low, cover and simer until the carrots and parsnips are very soft and the potato tender and starting to fall apart, around 50 to 60 minutes. Once cooked stir in the coconut milk and process with an immersion blender until smooth.

I have made these brownie numerous times now and I absolutely love them. I add 90ml of plant milk (I use Oat Milk but have also used Almond milk) this makes them nice and squidgy.
I couldn't leave my hubby out so I made him some shortbread and chocolate chip cookies, it was certain a very busy morning/early afternoon.
