Hello everyone - here’s a winter warmer to spread some cheer at this very tricky time. Not really an original recipe but I was inspired to make it after receiving a lovely Christmas gift of pantry goodies that included crystallised ginger and raw honeycomb! (Naughty me couldn’t wait until Christmas Day to open it!😈) I thought of you peeps and how you might all enjoy a lovely hot mug of ginger and honey latte!
I gently simmered some single cream, enough for 2 servings, with a rather large dollop of clotted cream (very naughty, I know! KK are you reading this?!😆) and added 1 heaped teaspoon of crushed ginger and 2 teaspoons of runny orange blossom honey. I crushed about a teaspoon of the raw honeycomb wrapped in grease proof paper with a rolling pin, chopped a couple of medium sized pieces of crystallised ginger into smaller bits and added the crushed honeycomb and chopped ginger to the hot cream mixture. Stirred it around for 5 minutes on a very low heat and then blitzed the mixture in the blender to shred all the ginger and honeycomb bits and to make it super frothy! I then then poured it into the glass, finished it off with some squirty cream, added a dusting of ground cinnamon and sprinkled some chopped crystallised ginger on the top. For an indulgent nibble on the side, I added a dark chocolate coated ginger cookie - yum! 😋
I’ll see what I can make next weekend - with the Christmas sweetie leftovers - if there are any! 😂
