Evening peeps! Here’s what’s on the menu today if you fancy a quick cyber drive-thru? It’s pretty fiery - ideal for chilly winter evenings, by all means adjust the ginger to taste along with the amount of sugar and coffee that you normally like.
So I simmered 2 mugs of whole farm milk with one heaped teaspoon of crushed ginger - I couldn’t get any fresh root ginger so bought the crushed stuff in a jar instead. I popped in a heaped teaspoon of cinnamon, another of ground ginger (oh yes! More of the hot stuff!) and grated in half a nutmeg - you could use a teaspoon of the already ground stuff if grating is too fiddly. I then poured in a teaspoon of vanilla essence and two heaped teaspoons of Demerara sugar. I whisked it all in, let it gently simmer for about 5 minutes, poured in 2 shots of freshly ground coffee and blitzed the latte blend in the Nutribullet for 10 seconds. This makes sure all the crushed ginger doesn’t leave blobby shreds lurking in your mug, it also makes the latte nice and frothy.
I then poured it into the glasses, added a swirl of squirty cream, dusted it with cinnamon and decorated it with Gingerbread Matchmakers (which are divine - a big thank you to Spotty for suggesting these!) As a finishing touch, I added a couple of mini gingerbread men to the creation - I love the expression of the little chap sitting in the cream on the top! It really is a winter warmer and it got a massive thumbs up from the kids too! I think a cheeky shot of whisky would go quite nicely with it as well...
