Hi everyone. This is my leftover quiche from last night's dinner. It had green olives, shredded cheese, mild guacamole salsa, brown rice for the crust and liquid eggs. I had a Greek Key Lime yogurt on the side. When I had the quiche last night, I had a side salad, walnut raspberry dressing, guacamole salsa and a Key Lime Greek yogurt for dessert. With the yogurt for lunch, the total carbs. are: 37. Last night's total carbs. were: 47.

This is going to seem a silly question, but how do you bind a brown rice crust?
You put the rice, liquid eggs, olives and cheese together. Then, use a container to put it in before cooking it in the microwave. All and any questions are welcomed!

Thank you for saying this about the quiche and the guacamole salsa. It was the first time trying the salsa and adding it to the quiche last night. I liked the salsa so much, I decided to use it again today at lunch, as well. I rewarmed the slice of quiche up and then after letting it sit out on the table before starting lunch, I put some of the salsa on top and took a picture at that time.
Very nice Leah, we add salsa and guacamole in almost everything here to give it a fresh taste so good. So lush the quiche looks in the pic. 😋Thank you for your tip how to make quiche tastes good next day 😁👍
