I made this recipe last night. From the BBC Good Food site and made from bread crumbs, black beans and cooked sweet potato. It did taste very nice but the patties didn’t stay firm when cooking and the outside kept breaking off exposing a soft sticky interior. Any suggestions to improve this? I thought maybe mixing in chia seed “egg” to keep it vegan.

Hi willsie01 You can try chia seeds gram flour is good too and you can also buy egg replacer:
orgran.com/products/no-egg-...
It also helps to have the fat nice and hot so the patties seal really well and have a crispy coat.
The main thing is they tasted good so you can tweak the recipe and I hope thAt you get good results.

How did you cook the sweet potato?
I tend to bake them, then remove the skin, which gives a much mushier texture than e.g. microwaving them.
The recipe specified microwaving, which I did. It was mushy and I thought the cooking time could have been shorter.
Chilling before cooking I find helps although I would not microwave.
