Tonight, I had a Veggie Burger made from pea protein and has no wheat in it. I had a gluten free hamburger bun with sweet relish and yellow mustard. For dessert, I had a peach Greek yogurt that was lower sugar. The total carbs. for the meal was: 60.

Your gluten free flat bread with refried beans sounds good for a dinner. Did you have any dessert afterwards?
To do the carbs., I read the total carbs. on each can/container each item I eat and write them down with the item's name. I add everything up to get the grand total carbs. and then use that number to figure out the insulin dose for each meal and/or snack. If the meal/snack has no carbs., then I don't do any insulin at the time. It also depends on the blood sugars, personally.
Thanks for that, Activity. We try to keep our carbs down (Jacqui's mother is diabetic, so). I must admit to a liking for rice, but it is a rare treat. I am not sure how one would quantify carbs using UK packaging and labels, however.
How many carbs. are in the rice? Some rice is less than others. Brown rice (depending on the brand) is less than regular rice. This is the same with some brands of gluten free breads, as well.
I have found most gluten free breads are off limits for me -- they contain ingredients (maize flour, corn starch) to which I am intolerant. We now buy the flours I use individually, and I mix them and make my own bread. Jacqui continues to eat 'normal' wheaty bread, but has only 2 slices per day. I can have oatcakes, so I have a couple for breakfast. We like Basmati rice -- a staple in the West Indies, especially Trinidad -- but eat brown rice on occasion.

I took a leaf out of your book and had a big salad with new potatoes cooked in their skin. I love salads and new potatoes. And for desert I had raspberries banana and cream...ππ
Thank you, Hidden ! The Veggie Burgers we get are one of my favorite types. They seem to stay together better and are also gluten free. There's a few brands out here that are not gluten free, but the ones that are, sometimes don't stay together so well. Not sure if it's because of what they are made out of, or if it's just luck now and then.
A big salad with potatoes sound great! What else did you have in it? Dessert sounds really good! Did you do it as a parfait?
