Here's a casserole I made with onions garlic tomatoes sweet peppers chestnut mushrooms Chantenay carrots black beans lentils and quinoa in a peanut butter sauce, with cumin ginger turmeric and black pepper. I bought the black beans to have with the pasta bake I did last week but forgot to put the beans in, so this has a lot of protein with the black beans peanut butter and lentils and its gluten free and plant based. π
Hi Red18, I cooked the onion garlic peppers gently in olive oil while the carrots boiled, as did the quinoa with the lentils. Then I added the peanut butter to the onions added the carrots with the water they cooked in, mixed everything together and baked in a casserole dish @150C to bake gently.
