Gluten free vegan rich shortbread biscuits.

β€’19 Replies

Hi everyone,

I have a friend and neighbour who is gluten intolerant vegan and likes baking so often gives me cakes and cookies. So I reciprocate by baking gf vegan cakes and cookies and inviting her around and yesterday I tray baked these gluten free shortbread biscuits.

I was really pleased with the taste and texture and gave the majority to my friend as I've so appreciated being given home baked cakes and cookies by her during the lockdown so we are glad that the lockdown helped us to make friends.

Recipe: 50g ground almonds 200g plain white gluten free flour 200g Natural' plant based spread or alternative 75g dark soft brown sugar 50ml water with 1 desert spoon of gram flour thoroughly mixed and spread in a baking tray and baked for around 25 mins.

I took a photo and sent one to my friendly neighbour and she said I'll be round 😁 and I was very pleased with the taste and texture too.

Well how lovely is that when you share your goodies. I'd happily join you eating your shortbread.

The ginger cake also looks delicious, especially with chocolate icing.

Have a good day Jerry.

I would substitute the white GF flour to brown or another GF flour

β€’ in reply toacuphealing

Hey thanks acuphealing you can use any flour so brown sounds good to me and I grind quinoa and use that as a healthy grail alternative. 😊

Hi Hidden These look great - what temperature do you set your oven at to bake them?

Zest :-)

β€’ in reply toZest

Hi Zest thank you and I baked at 175C in a fan oven. 😊

Hi Hidden Thanks, I have just made up the mixture, and put them in the oven at 175 degrees fan oven, so I hope to sample one later. I have used butter in mine, and didn't know what 'gram' flour was - so I just used a desertspoon extra of my brown spelt flour - and I must say the consistency is great, and it was so speedy to make!

Thanks for this great recipe.

Zest :-)

Hey this is great Zest I hope they turn out well and you enjoy them. 😊

Hi Hidden I didn't notice that I put it on at 160 degrees fan, so mine took slightly longer (about 36 minutes) but I'm pleased with how it looks, and I'm cooling it now - will try some after lunch! Exciting.

I'll try to attach a photo here of the tray bake.

Short-bread tray-bake as per Jerry's recipe :-)
