I have a friend and neighbour who is gluten intolerant vegan and likes baking so often gives me cakes and cookies. So I reciprocate by baking gf vegan cakes and cookies and inviting her around and yesterday I tray baked these gluten free shortbread biscuits.
I was really pleased with the taste and texture and gave the majority to my friend as I've so appreciated being given home baked cakes and cookies by her during the lockdown so we are glad that the lockdown helped us to make friends.
Recipe: 50g ground almonds 200g plain white gluten free flour 200g Natural' plant based spread or alternative 75g dark soft brown sugar 50ml water with 1 desert spoon of gram flour thoroughly mixed and spread in a baking tray and baked for around 25 mins.
I took a photo and sent one to my friendly neighbour and she said I'll be round π and I was very pleased with the taste and texture too.

Hi Jerry looks lovely I enjoy looking at your food pictures even tho can't eat them I'm viewing the house Tuesday, the nebours are lovely I talk to them regular ones a sweet lady about 83 but thought lot younger she's very fit walks in park still drives lost her husband a while ago I remember I walked round park with her Xmas 2 years ago when mam was in hospital my mam really likes her too so it will be nice for her too me living next door if it comes off who knows maby shel bake me some shortbread and invite me round lol a big factor in house buying good nebours fate is fate I've give up.kn stressing switched off from it for now anyway lolππ―

Hi Hidden Thanks, I have just made up the mixture, and put them in the oven at 175 degrees fan oven, so I hope to sample one later. I have used butter in mine, and didn't know what 'gram' flour was - so I just used a desertspoon extra of my brown spelt flour - and I must say the consistency is great, and it was so speedy to make!
Hi Hidden I didn't notice that I put it on at 160 degrees fan, so mine took slightly longer (about 36 minutes) but I'm pleased with how it looks, and I'm cooling it now - will try some after lunch! Exciting.
