I've been making vegan flap jacks with buckwheat flakes successfully but am waiting for my whole food shop to get new stock next week, so when my vegan friend and neighbour sent me a text inviting herself around for tea this afternoon I made some cookies using quinoa flakes.
If you make cookies or cakes with quinoa flakes they can be very scrunchy so I soaked them in boiling water first to make them softer and you can see this in their texture.
Here's the recipe 200g quinoa flakes 100g Pure plant based butter 75g dried fruit 50g Demerara sugar 2 table spoons of golden syrup or maple syrup 50ml plant based single milk.
Melt the pure first then add the sugar and syrup and dissolve then add the quinoa flakes and 75g mixed dried fruit and mix thoroughly.
Spread in a baking g tray and I put a few buckwheat flakes on top before baking for around 30mins @175 depending on their thickness until cooked through. Allow to cool thoroughly then cut into squares and they go extremely well with a nice cuppa.
I think this shows what we can do with alternative grains and still use wholesome ingredients as quinoa flakes pack a big nutritional punch being a complete food and a pseudo grain as its a seed.
