I've been experimenting with gf vegan cookies as my neighbour is a gluten free vegan who loves baking and is always inviting around for home made gf vegan cake or better still popping around with some, just like this:
I love baking so am happy to reciprocate and am pleased with how these have come out.
Here's the recipe. 300g plain gluten free flour 200g pure vegan butter 100g soft brown sugar 150g mixed dried fruit 1 teaspoon cinnamon 1/2 teas spoon egg replacer with enough Alpro single cream to mix into a dough. I spread the mix into a baking tray and tray baked them for approx 30 mins at 175C.
I did sample one when it was warm so am looking for more later as my friend is back from being on holiday and I'm expecting a visit soon.

🍊 peel is fantastic in any baked treat! Myer 🍋 are great too. The skin is soft enough to eat when cooked I made 🍫 chip blondes with almond butter. It has 🥚 and baking powder idk 🤷🏼♀️ if that qualifies as gluten free but I don’t seek gluten free. I had to freeze them or I would eat them in two days!
I agree Blueruth peel is really good in baking so I love the sound of your choc chip blondes so you enjoy them. It sounds a great recipe and could easily be gluten free. 👍
