I've been experimenting with the best vegan alternatives for baking and made these cookies by adapting another biscuit recipe and they've passed the taste test so I can happily invite her around. π
Here's the recipe I used, 50g ground almonds 150g plain gluten free flour 100g Pure spread 100g brown sugar 100 mixed dried fruit 75ml Alpro single cream mixed to a dough spread in a baking tray and baked for approx 20 mins until cooked through.
Oh no you've been at it again Jerry with your baking and photos of these lovely looking cookies. Really interested in the use of Alpro 'single cream' as an ingredient as that seems like such a lovely convenient way to add a vegan fat to a recipe.Thanks for sharing the recipe with us but now, don't be surprised if not only your neighbour turns up for a cuppa and cookies but me too! ππ

Your cookies look delicious. Your neighbours very lucky to have you as a neighbour. I love almonds and use ground and flake almonds in my recipes too πΌ π
