Hi everyone,

this is one of my favourite cookies and a Christmas favourite so even with all the restrictions we can still enjoy Christmas so here's my Shortbread biscuits and the recipe:

340g plain gluten free flour mix (I used Doves farm) 225g butter 110g soft brown sugar 2 large free range eggs with some flaked almonds to top.

Whiz it up in a food processor and spread in a baking tray these are nice deep ones so baked for around 45 mins but this depends on thickness so cook until cooked through.

I am going to be challenged to figure out the ingredient measurements in USA equivalent it I am determined...I have seen your recipe before and I am not a cookie lover these love like something I would like very much! Be Safe!

Hi Jerry they look really nice I love shortbread and almonds, it's strange how I hate marzipan and Xmas cake yet I love raisens sultanas I don't the peel in the fruit and I think it's a bit rich and I'm been ready faddy now but I don't like icing lol so I guess that's why I don't like Xmas cake lol, mam makes a nice lighter fruit cake which I love I love a few walnuts in too. Been for long walk then been working in garden clearing leaves 🌟

Hi Hidden and thank you I love shortbreads and I love Christmas cake including the marzipan but I couldn't eat a lot.

I bet that your mums fruit cake is really nice and with walnuts even better so its great that your mum makes them.

You deserve some afternoon tea and cake after a long walk and clearing leaves. 😊

Oh and I don't like them glaze cherries either lol I am tired but I made the mistake of going back to bed when I let pixie out I didn't sleep at first as I had to let him in it was cold and I knew he would be sat waiting at the door and guess what the heating not working, I don't know what we're having for tea yet mam was going to bake. She doesn't really want any workmen in either she said the fruit loaf you did other day looked nice me too I hadn't got round to replying hope you enjoy your shortbread 🌟

Thanks Jerry....I struggled to figure out how to work that site but I am going to master it as it would be most helpful! Instead I just googled it for fast results. Now I shall not make them until I feel strong enough willpower wise not to eat the entire pan full!! That is the way I am with the things I like. Am not a sweet eater generally but almonds are a weakness. Nuts of all kinds as well as cheese of all sorts are my big downfall! Right now I weigh a 116 pounds and that is where I will stay....but it takes watching!! Thanks again! Stay Safe!

What temperature, gas or electric or fan oven Jerry did you bake them and how big was the baking tray?πŸ€—

Hi 175C and I used a 20cm square pyrex dish so they're nice and chunky. 😊
