I've made friends with some vegans who live a few doors away and we had a bubble and would visit and have gf vegan cookies and her gf vegan cookies are amazing so I've been trying to make nicer vegan shortbread and this is my latest attempt, the irony is we dissolved our bubble when the new strain went rampant as we've got the stay safe message. So I'll just have to be a martyr and eat them myself...LOL
Here's the recipe: 250g plain GF flour, 200g coconut butter, 120g Demerara sugar 200ml coconut milk (enough to make a dough. I spread the mix in a ceramic baking tray and baked for 20mins on 170 and then 25 mins on 150 until cooked through.
I expect that I'll have to sample one or two with some afternoon tea later 😁 which seems very civilised to me.
