I’ve been experimenting with dairy free baking and my vegan friend and neighbour is popping round this afternoon so I said I’ll bake some cookies.
I ground some quinoa in my coffee grinder to make a quinoa flour as I like adding quinoa to food as it’s so healthy.
Here’s the recipe: 50g ground quinoa 250g plain gluten free flour 200g Pure vegan cooking block 100g brown sugar 50ml of vegan single cream and 1/2 teaspoon vanilla essence.
I just weighed it and then whizzed it up and spread it in a Pyrex dish and baked for approx 25 mins @170C

Thank you Sue and your'e so right about quinoa, it also adds protein which important in gluten free baking so its win win and then I get to eat them so even better. 👍 😁
