Gluten free Parsnip and spring cabbage fritters with salad

Hi everyone,

Here’s what I made for dinner tonight, I cooked 2 large parsnips with a spring green cabbage with a diced onion. Then I drained it and mashed it with some gram flour and an egg before shaping and coating in gram flour and cooked them in a little olive oil.

I had 2 with a simple salad of lettuce baby plum tomatoes spring onions and some grated cheese. I enjoyed it and it’s nice and healthy. 🌈😊

Wow! Your dinner looks really wonderful! They look like latkas! 😀👍🌈 Glad you enjoyed everything. Do you have any leftovers for lunches/extra dinners?

in reply toActivity2004

Thanks Leah, they are very similar to latkes and yes I made 6 so happy days. 🌈😊

That's fantastic to hear, Hidden ! :-) I always make 6 salmon patties so I can two each time. I use almond flour for the patties and some mustard on top instead of sour cream/dressing. :-) For latkas, I use either dressing or Greek yogurt on top for subbing for sour cream.

Almond flour is another great healthy gf alternative, so I bet your salmon patties are really good. 🌈😊

They are with the salmon and its bones mixed in with everything else to add calcium! Also, has lots of protein, too. :-) We have to cook more tomorrow for dinners and maybe a lunch here and there. :-)

Hi Leah I like tinned tuna patties made similar 😊😺but there's never much tuna in them I wonder why lol 🐆🐆🐆

Smaller sized cans in stores? We have cans that seem smaller than the last few times and I feel that it’s unfair.

Ooh that's something different to make with parsnips! Thanks for sharing Jerry! 😊

If you grate the parsnips you can make a Parsnip Hash brown.

They certainly do Jerry and I'd have roast parsnips over roast potatoes any day.

Hope you've had a good day so far.

Take care 😊👍🌈

Hi Jerry,

Your fritters look very yummy to eat!

This is definitely something I can remember to make, as us Afro-Caribbean folk are big on our fritters!!

Plus they're a great snack alternative!

Glad that you enjoyed them Jerry xx
