Hi everyone, this is what I made for dinner it’s a pie with lentils onions and vegetables with a pie crust made using a crumble recipe as that’s a lot easier than making pastry that’s why it looks a bit rough and ready LOL.
I sautéed diced onion in a little olive oil before adding frozen mixed veg and cooked lentils and a little water with a table spoon of gram flour to thicken a teaspoon of low salt bouillon and a teaspoon of yeast extract.
The crust I made with 150g plain gluten free flour 75g ground quinoa 110g pure vegan butter with a little celery salt and black pepper mixed thoroughly.
I roasted some potatoes in their skins at the same time and enjoyed it as it was perfect with these darker evenings.
