Here’s what I made for dinner tonight, it’s soup, made with a large spoon of quinoa baby leeks 1 large diced potato diced onion some baby carrots. All par boiled before coarsely blending then bringing back to the boil with half a tin of coconut milk some low salt bouillon a little dried chilli and black pepper.
Then I diced another small potato and cooked that in olive oil instead of croutons so this is gluten free and plant based and hit the spot for me.
