Hereβs what I made for dinner tonight, itβs soup, made with a large spoon of quinoa baby leeks 1 large diced potato diced onion some baby carrots. All par boiled before coarsely blending then bringing back to the boil with half a tin of coconut milk some low salt bouillon a little dried chilli and black pepper.
Then I diced another small potato and cooked that in olive oil instead of croutons so this is gluten free and plant based and hit the spot for me.
To me this is wholesome comfort food and on that happy note enjoy your evening and keep warm and safe. ππ
